Cucumber in a cocktail? You bet. Easy like a Sunday morning, this cocktail is easy to make and is likely to become your favorite summer drink - or simply the drink you'll make when you want something light and refreshing. We LOVE this cocktail and thanks to Lino, from Upstairs on the Square we now know how to make it.
Ingredients
- 2 cucumber slices ½ in thick, (cut one slice into cubes)
- 2 oz single barrel rum (or other strong tasting rum, preferably more than 80 proof)
- ½ oz lemon juice (or you can try passion fruit juice as well)
- ½ oz honey syrup (equal parts honey and water)
- ice
- cucumber slice for garnish
How-to
- Muddle cucumber slices in a pint glass
- Add the rum, lemon juice, honey syrup
- Fill the glass with ice
- Cover glass with shaker and give the drink a good shake
- Put some fresh ice into an old-fashioned glass
- Strain drink into the glass
- Garnish with a cucumber slice
